Ingredients

  • Daikon radish - 300 grams, sliced thinly
  • Shiitake mushrooms - 100 grams, sliced
  • Green onions - 2 stalks, chopped
  • Bone broth - 500 ml
  • Soy sauce (or tamari for gluten-free) - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Salt - to taste
  • Pepper - to taste
  • Pork belly - 150 grams, thinly sliced

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large oven-safe pot, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, sautéing until fragrant, about 1 minute.
  3. Add the sliced pork belly to the pot, cooking until it begins to brown, about 5-7 minutes.
  4. Layer the sliced daikon and shiitake mushrooms on top of the pork belly in the pot.
  5. In a separate bowl, mix the bone broth, soy sauce, salt, and pepper. Pour this mixture over the layered vegetables and pork.
  6. Sprinkle the chopped green onions on top.
  7. Cover the pot with a lid or aluminum foil and bake in the preheated oven for 30 minutes.
  8. After 30 minutes, remove the lid and bake for an additional 10-15 minutes, allowing the top to slightly brown.
  9. Remove from the oven and let it cool for a few minutes before serving.
