- Daikon radish - 300 grams, sliced thinly
- Shiitake mushrooms - 100 grams, sliced
- Green onions - 2 stalks, chopped
- Bone broth - 500 ml
- Soy sauce (or tamari for gluten-free) - 2 tablespoons
- Sesame oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Salt - to taste
- Pepper - to taste
- Pork belly - 150 grams, thinly sliced
Steps
- Preheat the oven to 180°C (350°F).
- In a large oven-safe pot, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, sautéing until fragrant, about 1 minute.
- Add the sliced pork belly to the pot, cooking until it begins to brown, about 5-7 minutes.
- Layer the sliced daikon and shiitake mushrooms on top of the pork belly in the pot.
- In a separate bowl, mix the bone broth, soy sauce, salt, and pepper. Pour this mixture over the layered vegetables and pork.
- Sprinkle the chopped green onions on top.
- Cover the pot with a lid or aluminum foil and bake in the preheated oven for 30 minutes.
- After 30 minutes, remove the lid and bake for an additional 10-15 minutes, allowing the top to slightly brown.
- Remove from the oven and let it cool for a few minutes before serving.
