Ingredients
- Almond flour - 100 grams
- Xanthan gum - 1 teaspoon
- Water - 80 ml
- Erythritol - 2 tablespoons
- Unsweetened red bean paste (or homemade) - 60 grams
- Coconut flour - 1 tablespoon (for dusting)
- Vanilla extract - 1/2 teaspoon
Steps
- In a medium bowl, mix the almond flour, xanthan gum, erythritol, and vanilla extract until well combined.
- Gradually add water to the dry mixture, stirring continuously until a dough forms.
- Knead the dough for a few minutes until smooth, then cover it with plastic wrap and let it rest for 10 minutes.
- Divide the dough into 4 equal portions and flatten each portion into a disc, about 1/4 inch thick.
- Place 15 grams of the red bean paste in the center of each disc and carefully fold the edges over to seal the filling inside, forming a ball.
- Dust each daifuku with coconut flour to prevent sticking and place them on a plate.
- Steam the daifuku in a steamer basket lined with parchment paper for about 10 minutes until they are cooked through and slightly firm.
- Remove from the steamer, let cool slightly, and serve immediately or refrigerate for a refreshing treat.
