Ingredients

  • Almond flour - 100 grams
  • Xanthan gum - 1 teaspoon
  • Water - 80 ml
  • Erythritol - 2 tablespoons
  • Unsweetened red bean paste (or homemade) - 60 grams
  • Coconut flour - 1 tablespoon (for dusting)
  • Vanilla extract - 1/2 teaspoon

Steps

  1. In a medium bowl, mix the almond flour, xanthan gum, erythritol, and vanilla extract until well combined.
  2. Gradually add water to the dry mixture, stirring continuously until a dough forms.
  3. Knead the dough for a few minutes until smooth, then cover it with plastic wrap and let it rest for 10 minutes.
  4. Divide the dough into 4 equal portions and flatten each portion into a disc, about 1/4 inch thick.
  5. Place 15 grams of the red bean paste in the center of each disc and carefully fold the edges over to seal the filling inside, forming a ball.
  6. Dust each daifuku with coconut flour to prevent sticking and place them on a plate.
  7. Steam the daifuku in a steamer basket lined with parchment paper for about 10 minutes until they are cooked through and slightly firm.
  8. Remove from the steamer, let cool slightly, and serve immediately or refrigerate for a refreshing treat.
