Ingredients
- Cauliflower - 300 grams
- Coconut oil - 2 tablespoons
- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Curry powder - 2 tablespoons
- Coconut milk - 200 ml
- Soy sauce (or tamari for gluten-free) - 1 tablespoon
- Salt - to taste
- Pepper - to taste
- Green onions - 2, chopped for garnish
- Coriander leaves - for garnish
Steps
- Start by preparing the cauliflower rice. Remove the leaves and stem from the cauliflower, then cut it into florets. Pulse in a food processor until it resembles rice grains.
- In a large skillet, heat coconut oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Add minced garlic and grated ginger to the skillet, cooking for an additional 1-2 minutes until fragrant.
- Stir in the curry powder and cook for another minute, allowing the spices to bloom.
- Pour in the coconut milk and soy sauce, stirring to combine. Let the mixture simmer for about 5 minutes.
- Add the cauliflower rice to the skillet, mixing well to coat it with the curry sauce. Season with salt and pepper to taste.
- Cover the skillet and let it cook for about 10-15 minutes, stirring occasionally, until the cauliflower is tender.
- Once done, remove from heat and serve hot, garnished with chopped green onions and coriander leaves.
