- Rice vinegar - 1 tablespoon (15 ml)
- Soy sauce (or tamari for gluten-free) - 1 tablespoon (15 ml)
- Erythritol (or preferred keto sweetener) - 1 teaspoon (5 grams)
- Toasted sesame seeds - 1 tablespoon (8 grams)
- Green onion - 1 stalk, finely chopped
- Red chili flakes - 1/4 teaspoon (optional)
Steps
- Soak the dried wakame seaweed in warm water for 10 minutes until it rehydrates and expands. Drain and gently squeeze out excess water.
- While the seaweed is soaking, thinly slice the cucumber and place it in a mixing bowl.
- In a small bowl, whisk together the sesame oil, rice vinegar, soy sauce, and erythritol until the sweetener is dissolved.
- Add the rehydrated wakame to the bowl with cucumber, then pour the dressing over the mixture.
- Toss everything together until well combined, then sprinkle with toasted sesame seeds, chopped green onion, and red chili flakes if using.
- Serve immediately or chill in the refrigerator for 10 minutes before serving for a refreshing taste.
