  • Sesame oil - 1 tablespoon (15 ml)
  • Rice vinegar - 1 tablespoon (15 ml)
  • Soy sauce (or tamari for gluten-free) - 1 tablespoon (15 ml)
  • Erythritol (or preferred keto sweetener) - 1 teaspoon (5 grams)
  • Toasted sesame seeds - 1 tablespoon (8 grams)
  • Green onion - 1 stalk, finely chopped
  • Red chili flakes - 1/4 teaspoon (optional)

Steps

  1. Soak the dried wakame seaweed in warm water for 10 minutes until it rehydrates and expands. Drain and gently squeeze out excess water.
  2. While the seaweed is soaking, thinly slice the cucumber and place it in a mixing bowl.
  3. In a small bowl, whisk together the sesame oil, rice vinegar, soy sauce, and erythritol until the sweetener is dissolved.
  4. Add the rehydrated wakame to the bowl with cucumber, then pour the dressing over the mixture.
  5. Toss everything together until well combined, then sprinkle with toasted sesame seeds, chopped green onion, and red chili flakes if using.
  6. Serve immediately or chill in the refrigerator for 10 minutes before serving for a refreshing taste.
