- Cauliflower rice - 200 grams
- Sashimi-grade salmon - 100 grams
- Sashimi-grade tuna - 100 grams
- Cucumber - 1 small, thinly sliced
- Avocado - 1 medium, diced
- Nori sheets - 2, cut into small strips
- Sesame oil - 1 tablespoon
- Soy sauce (low sodium) - 2 tablespoons
- Rice vinegar - 1 tablespoon
- Wasabi - to taste
- Pickled ginger - to taste
- Radish sprouts - a handful (optional)
- Sesame seeds - 1 teaspoon
Steps
- Prepare the cauliflower rice by grating the cauliflower or using a food processor to achieve a rice-like texture.
- In a skillet, heat 1 tablespoon of sesame oil over medium heat and sauté the cauliflower rice for about 5-7 minutes until tender. Remove from heat and let cool.
- While the cauliflower rice is cooling, slice the sashimi-grade salmon and tuna into bite-sized pieces.
- In a small bowl, mix the soy sauce and rice vinegar. Set aside.
- To assemble, divide the cauliflower rice evenly between two bowls.
- Top each bowl with the sliced salmon, tuna, cucumber, and diced avocado.
- Garnish with nori strips, sesame seeds, and radish sprouts if using.
- Serve with wasabi and pickled ginger on the side, and drizzle with the soy sauce mixture.
