- Dashi stock - 300 ml
- Soy sauce (low-sodium) - 1 tablespoon
- Mirin (optional) - 1 teaspoon
- Salt - 1/4 teaspoon
- Shiitake mushrooms (diced) - 30 grams
- Cooked shrimp (chopped) - 30 grams
- Green onion (chopped) - 1 tablespoon
- Sesame oil - 1 teaspoon
- Keto-friendly tofu (diced) - 50 grams
Steps
- In a mixing bowl, whisk together the eggs, dashi stock, soy sauce, mirin (if using), and salt until well combined.
- Strain the egg mixture through a fine mesh sieve into another bowl to ensure a smooth custard.
- Prepare two small ramekins or cups and lightly grease them with sesame oil.
- Divide the diced shiitake mushrooms, chopped shrimp, green onion, and diced tofu evenly between the ramekins.
- Pour the strained egg mixture over the fillings in each ramekin, filling them to about 3/4 full.
- Cover each ramekin loosely with aluminum foil to prevent water from dripping into the custard.
- Fill a steamer pot with water, bring to a gentle simmer, and place the ramekins inside, ensuring the water does not touch the tops.
- Steam the custards for about 15-20 minutes, or until the egg is set but still slightly jiggly in the center.
- Remove the ramekins from the steamer and let them cool for a few minutes before serving.
