Ingredients

  • Eggs - 3 large
  • Dashi stock - 300 ml
  • Soy sauce (low-sodium) - 1 tablespoon
  • Mirin (optional) - 1 teaspoon
  • Salt - 1/4 teaspoon
  • Shiitake mushrooms (diced) - 30 grams
  • Cooked shrimp (chopped) - 30 grams
  • Green onion (chopped) - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Keto-friendly tofu (diced) - 50 grams

Steps

  1. In a mixing bowl, whisk together the eggs, dashi stock, soy sauce, mirin (if using), and salt until well combined.
  2. Strain the egg mixture through a fine mesh sieve into another bowl to ensure a smooth custard.
  3. Prepare two small ramekins or cups and lightly grease them with sesame oil.
  4. Divide the diced shiitake mushrooms, chopped shrimp, green onion, and diced tofu evenly between the ramekins.
  5. Pour the strained egg mixture over the fillings in each ramekin, filling them to about 3/4 full.
  6. Cover each ramekin loosely with aluminum foil to prevent water from dripping into the custard.
  7. Fill a steamer pot with water, bring to a gentle simmer, and place the ramekins inside, ensuring the water does not touch the tops.
  8. Steam the custards for about 15-20 minutes, or until the egg is set but still slightly jiggly in the center.
  9. Remove the ramekins from the steamer and let them cool for a few minutes before serving.
