- Pork belly - 300 grams
- Soy sauce (or tamari for gluten-free) - 50 ml
- Mirin (or sugar-free alternative) - 30 ml
- Sake (or dry white wine) - 30 ml
- Garlic - 2 cloves, minced
- Ginger - 1 inch, sliced
- Green onions - 2, chopped
- Cauliflower - 300 grams, riced
- Sesame oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- In a pan, heat the sesame oil over medium heat. Add the minced garlic and sliced ginger, sautéing until fragrant.
- Add the pork belly to the pan, browning all sides for about 5-7 minutes.
- Pour in the soy sauce, mirin, sake, and a pinch of salt and pepper. Bring to a simmer.
- Cover the pan and reduce the heat to low, allowing the pork to braise for 60 minutes, flipping occasionally.
- While the pork is cooking, prepare the cauliflower rice by steaming it until tender, about 5-7 minutes, then season with salt and pepper.
- Once the pork belly is tender, remove it from the pan and let it rest for a few minutes before slicing it thinly.
- To serve, place a generous portion of cauliflower rice in each bowl, top with sliced chashu, and garnish with chopped green onions.
