Ingredients
- Cauliflower rice - 300 grams
- Chicken breast - 150 grams, diced
- Eggs - 2 large
- Green onions - 2, chopped
- Bell pepper - 1 small, diced
- Soy sauce (or coconut aminos) - 2 tablespoons
- Sesame oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Salt - to taste
- Black pepper - to taste
- Olive oil - 1 tablespoon
Steps
- Heat olive oil in a large skillet over medium heat.
- Add the diced chicken breast and cook until browned and cooked through, about 5-7 minutes. Remove and set aside.
- In the same skillet, add garlic and ginger, sautéing for about 30 seconds until fragrant.
- Add the bell pepper and stir-fry for about 3 minutes until tender.
- Stir in the cauliflower rice and cook for another 5 minutes, mixing continuously.
- Push the cauliflower rice to one side of the skillet and crack the eggs into the empty space. Scramble the eggs until fully cooked, then mix them into the cauliflower rice.
- Return the cooked chicken to the skillet and pour in the soy sauce and sesame oil. Stir everything together and cook for an additional 2-3 minutes.
- Add chopped green onions, season with salt and black pepper to taste, and serve hot.
