Ingredients

  • Keto-friendly agar-agar powder - 2 teaspoons
  • Water - 500 ml
  • Erythritol - 2 tablespoons (or to taste)
  • Coconut milk - 100 ml
  • Chia seeds - 2 tablespoons
  • Matcha powder - 1 teaspoon
  • Unsweetened shredded coconut - 2 tablespoons
  • Mixed berries (strawberries, raspberries, blueberries) - 100 grams

Steps

  1. In a saucepan, dissolve 2 teaspoons of agar-agar powder in 500 ml of water over medium heat, stirring continuously until it comes to a boil.
  2. Once boiling, reduce the heat and stir in 2 tablespoons of erythritol. Allow the mixture to simmer for another 2-3 minutes until the erythritol fully dissolves.
  3. Remove from heat and pour the jelly mixture into a mold or container. Let it cool at room temperature for about 15 minutes, then refrigerate for at least 10 minutes until set.
  4. In a small bowl, combine 100 ml of coconut milk, 2 tablespoons of chia seeds, and 1 teaspoon of matcha powder. Mix well and let it sit for about 10 minutes to thicken.
  5. Once the jelly is set, cut it into cubes and arrange them in two serving bowls.
  6. Top the jelly cubes with the coconut milk mixture, sprinkle with unsweetened shredded coconut, and add the mixed berries as a garnish.
  7. Serve immediately and enjoy your Keto Anmitsu!
