Ingredients
- Keto-friendly agar-agar powder - 2 teaspoons
- Water - 500 ml
- Erythritol - 2 tablespoons (or to taste)
- Coconut milk - 100 ml
- Chia seeds - 2 tablespoons
- Matcha powder - 1 teaspoon
- Unsweetened shredded coconut - 2 tablespoons
- Mixed berries (strawberries, raspberries, blueberries) - 100 grams
Steps
- In a saucepan, dissolve 2 teaspoons of agar-agar powder in 500 ml of water over medium heat, stirring continuously until it comes to a boil.
- Once boiling, reduce the heat and stir in 2 tablespoons of erythritol. Allow the mixture to simmer for another 2-3 minutes until the erythritol fully dissolves.
- Remove from heat and pour the jelly mixture into a mold or container. Let it cool at room temperature for about 15 minutes, then refrigerate for at least 10 minutes until set.
- In a small bowl, combine 100 ml of coconut milk, 2 tablespoons of chia seeds, and 1 teaspoon of matcha powder. Mix well and let it sit for about 10 minutes to thicken.
- Once the jelly is set, cut it into cubes and arrange them in two serving bowls.
- Top the jelly cubes with the coconut milk mixture, sprinkle with unsweetened shredded coconut, and add the mixed berries as a garnish.
- Serve immediately and enjoy your Keto Anmitsu!
