Ingredients

  • Firm tofu - 300 grams
  • Coconut flour - 50 grams
  • Pork rinds (crushed) - 30 grams
  • Egg - 1 large
  • Soy sauce (or tamari for gluten-free) - 30 ml
  • Dashi stock (homemade or instant) - 250 ml
  • Mirin (sugar-free) - 15 ml
  • Green onions - 1 stalk, finely chopped
  • Shredded nori (seaweed) - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Press the tofu for 15 minutes to remove excess moisture, then cut it into cubes.
  2. In a bowl, beat the egg and season with salt and black pepper.
  3. In another bowl, combine coconut flour and crushed pork rinds.
  4. Dip each tofu cube into the egg mixture, then coat with the coconut flour and pork rind mixture, pressing lightly to adhere.
  5. In a frying pan, heat sesame oil over medium-high heat. Fry the coated tofu cubes until golden brown on all sides, about 3-4 minutes per side.
  6. While the tofu is frying, prepare the dashi broth by heating the dashi stock in a saucepan; add soy sauce and mirin, and let it simmer for 5 minutes.
  7. Once the tofu is cooked, place it in a serving bowl and pour the hot dashi broth over it.
  8. Garnish with chopped green onions and shredded nori before serving.
