Ingredients
- Firm tofu - 300 grams
- Coconut flour - 50 grams
- Pork rinds (crushed) - 30 grams
- Egg - 1 large
- Soy sauce (or tamari for gluten-free) - 30 ml
- Dashi stock (homemade or instant) - 250 ml
- Mirin (sugar-free) - 15 ml
- Green onions - 1 stalk, finely chopped
- Shredded nori (seaweed) - 1 tablespoon
- Sesame oil - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
Steps
- Press the tofu for 15 minutes to remove excess moisture, then cut it into cubes.
- In a bowl, beat the egg and season with salt and black pepper.
- In another bowl, combine coconut flour and crushed pork rinds.
- Dip each tofu cube into the egg mixture, then coat with the coconut flour and pork rind mixture, pressing lightly to adhere.
- In a frying pan, heat sesame oil over medium-high heat. Fry the coated tofu cubes until golden brown on all sides, about 3-4 minutes per side.
- While the tofu is frying, prepare the dashi broth by heating the dashi stock in a saucepan; add soy sauce and mirin, and let it simmer for 5 minutes.
- Once the tofu is cooked, place it in a serving bowl and pour the hot dashi broth over it.
- Garnish with chopped green onions and shredded nori before serving.
