Ingredients

  • Daikon radish - 100 grams, sliced
  • Carrot - 100 grams, julienned
  • Shiitake mushrooms - 50 grams, sliced
  • Tofu - 150 grams, cubed
  • Negi (Japanese leek) - 1 stalk, sliced
  • Kombu (dried kelp) - 10 grams
  • Miso paste - 2 tablespoons
  • Soy sauce - 1 teaspoon
  • Sesame oil - 1 teaspoon
  • Water - 800 milliliters
  • Salt - to taste
  • Pepper - to taste

Steps

  1. In a pot, combine the water and kombu. Let it soak for about 15 minutes to enhance the flavor.
  2. After soaking, bring the water to a gentle boil over medium heat and remove the kombu.
  3. Add the sliced daikon, carrots, and shiitake mushrooms to the pot. Simmer for about 10 minutes until the vegetables are tender.
  4. Add the cubed tofu and sliced negi to the pot. Simmer for another 5 minutes.
  5. In a small bowl, mix the miso paste with a ladle of hot soup until smooth. Stir the miso mixture back into the pot.
  6. Add soy sauce, sesame oil, salt, and pepper to taste. Stir well and remove from heat.
  7. Serve hot, garnished with additional negi if desired.
