Ingredients
- Daikon radish - 100 grams, sliced
- Carrot - 100 grams, julienned
- Shiitake mushrooms - 50 grams, sliced
- Tofu - 150 grams, cubed
- Negi (Japanese leek) - 1 stalk, sliced
- Kombu (dried kelp) - 10 grams
- Miso paste - 2 tablespoons
- Soy sauce - 1 teaspoon
- Sesame oil - 1 teaspoon
- Water - 800 milliliters
- Salt - to taste
- Pepper - to taste
Steps
- In a pot, combine the water and kombu. Let it soak for about 15 minutes to enhance the flavor.
- After soaking, bring the water to a gentle boil over medium heat and remove the kombu.
- Add the sliced daikon, carrots, and shiitake mushrooms to the pot. Simmer for about 10 minutes until the vegetables are tender.
- Add the cubed tofu and sliced negi to the pot. Simmer for another 5 minutes.
- In a small bowl, mix the miso paste with a ladle of hot soup until smooth. Stir the miso mixture back into the pot.
- Add soy sauce, sesame oil, salt, and pepper to taste. Stir well and remove from heat.
- Serve hot, garnished with additional negi if desired.
