Ingredients

  • Mirin - 10 ml
  • Tofu (firm) - 100 g, cubed
  • Green onions - 2, sliced
  • Mushrooms (shiitake or enoki) - 50 g, sliced
  • Seaweed (wakame) - 5 g, dried
  • Salt - to taste

Steps

  1. In a pot, bring the dashi stock to a gentle simmer over medium heat.
  2. Add the katsuobushi to the pot and let it steep for about 5 minutes, then strain the liquid to remove the flakes, returning the clear broth to the pot.
  3. Stir in the soy sauce and mirin, adjusting the seasoning with salt if needed.
  4. Add the cubed tofu and sliced mushrooms to the broth, cooking for another 5 minutes until heated through.
  5. Finally, add the dried seaweed and sliced green onions, letting them infuse for an additional minute.
  6. Serve hot in bowls, garnished with extra green onions if desired.
