Steps
- In a pot, bring the dashi stock to a gentle simmer over medium heat.
- Add the katsuobushi to the pot and let it steep for about 5 minutes, then strain the liquid to remove the flakes, returning the clear broth to the pot.
- Stir in the soy sauce and mirin, adjusting the seasoning with salt if needed.
- Add the cubed tofu and sliced mushrooms to the broth, cooking for another 5 minutes until heated through.
- Finally, add the dried seaweed and sliced green onions, letting them infuse for an additional minute.
- Serve hot in bowls, garnished with extra green onions if desired.
