Ingredients

  • Dashi stock - 500 ml
  • Katsuobushi (dried bonito flakes) - 20 g
  • Ramen noodles - 150 g
  • Soy sauce - 30 ml
  • Mirin - 15 ml
  • Green onions (sliced) - 2 stalks
  • Nori (seaweed) - 2 sheets
  • Soft-boiled eggs - 2
  • Cooked shrimp (peeled) - 100 g
  • Miso paste - 10 g
  • Sesame oil - 1 tsp
  • Salt - to taste

Steps

  1. Prepare dashi stock by boiling 500 ml of water and adding katsuobushi. Let it steep for 5 minutes, then strain to obtain a clear broth.
  2. In a pot, combine the dashi stock, soy sauce, mirin, and miso paste. Heat gently until well mixed and warmed through.
  3. Cook the ramen noodles according to package instructions, usually around 3-4 minutes. Drain and set aside.
  4. In the same pot with the broth, add the cooked shrimp and heat for another 2 minutes until warmed through.
  5. In serving bowls, place the cooked ramen noodles and ladle the hot broth with shrimp over them.
  6. Top each bowl with sliced green onions, a soft-boiled egg cut in half, a sheet of nori, and drizzle with sesame oil. Adjust seasoning with salt if needed.
  7. Serve immediately and enjoy your Katsuobushi Ramen!
