Ingredients

  • Cauliflower rice - 300 grams
  • Katsuobushi (dried bonito flakes) - 50 grams
  • Nori sheets - 2 sheets
  • Soy sauce (or Tamari for gluten-free) - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Green onions, chopped - 2 tablespoons
  • Pickled ginger (optional) - for serving

Steps

  1. Prepare cauliflower rice by grating or processing cauliflower florets into rice-sized pieces.
  2. In a large skillet, heat sesame oil over medium heat and add the cauliflower rice. Sauté for about 5-7 minutes until tender.
  3. Remove the skillet from heat and let the cauliflower rice cool slightly.
  4. In a mixing bowl, combine the cooled cauliflower rice, katsuobushi, soy sauce, salt, and chopped green onions. Mix well until all ingredients are evenly distributed.
  5. Wet your hands with water to prevent sticking, and take a portion of the mixture (about 100 grams) to form a triangular or oval shape.
  6. Wrap a strip of nori around each onigiri, ensuring the nori covers one side of the rice ball.
  7. Repeat the process for the remaining mixture to form a total of 2 onigiri.
  8. Serve the onigiri with pickled ginger on the side if desired.
