- Cauliflower rice - 300 grams

- Nori sheets - 2 sheets
- Soy sauce (or Tamari for gluten-free) - 1 tablespoon
- Sesame oil - 1 teaspoon
- Salt - 1/2 teaspoon
- Green onions, chopped - 2 tablespoons
- Pickled ginger (optional) - for serving
Steps
- Prepare cauliflower rice by grating or processing cauliflower florets into rice-sized pieces.
- In a large skillet, heat sesame oil over medium heat and add the cauliflower rice. Sauté for about 5-7 minutes until tender.
- Remove the skillet from heat and let the cauliflower rice cool slightly.
- In a mixing bowl, combine the cooled cauliflower rice, katsuobushi, soy sauce, salt, and chopped green onions. Mix well until all ingredients are evenly distributed.
- Wet your hands with water to prevent sticking, and take a portion of the mixture (about 100 grams) to form a triangular or oval shape.
- Wrap a strip of nori around each onigiri, ensuring the nori covers one side of the rice ball.
- Repeat the process for the remaining mixture to form a total of 2 onigiri.
- Serve the onigiri with pickled ginger on the side if desired.
