Ingredients

  • Mirin - 1 tablespoon (15ml)
  • Water - 100ml
  • Sukiyaki sauce or sweetener (like erythritol) - 1 teaspoon (optional)
  • Sesame seeds - 1 teaspoon (for garnish)
  • Chopped green onions - 1 tablespoon (for garnish)

Steps

  1. In a small saucepan, combine the soy sauce, mirin, and water. Bring the mixture to a gentle simmer over medium heat.
  2. Once simmering, add the katsuobushi flakes and stir well. If you prefer a sweeter taste, add the optional sweetener at this stage.
  3. Allow the mixture to simmer for about 5-7 minutes, stirring occasionally, until it thickens slightly.
  4. Remove from heat and let it cool for a few minutes. The katsuobushi will absorb some of the sauce and become more flavorful.
  5. Serve warm or at room temperature, garnished with sesame seeds and chopped green onions.
