- Dried shiitake mushrooms - 50 grams
- Water - 500 ml
- Soy sauce - 30 ml
- Mirin - 30 ml
- Brown sugar - 1 tablespoon
- Daikon radish - 200 grams, sliced
- Carrot - 100 grams, sliced
- Green onion - 2, chopped
- Sesame oil - 1 teaspoon
Steps
- Soak the dried shiitake mushrooms in 500 ml of hot water for about 15 minutes until softened. Remove the mushrooms, reserving the soaking liquid, and slice them thinly.
- In a pot, combine the reserved soaking liquid, soy sauce, mirin, and brown sugar. Bring to a simmer over medium heat.
- Add the sliced daikon radish and carrot to the pot, cooking for about 10 minutes until they begin to soften.
- Stir in the sliced shiitake mushrooms and continue to simmer for another 5 minutes until all ingredients are tender and the flavors meld.
- Remove from heat and drizzle with sesame oil. Garnish with chopped green onion before serving.
