Ingredients

  • Dried shiitake mushrooms - 50 grams
  • Water - 500 ml
  • Soy sauce - 30 ml
  • Mirin - 30 ml
  • Brown sugar - 1 tablespoon
  • Daikon radish - 200 grams, sliced
  • Carrot - 100 grams, sliced
  • Green onion - 2, chopped
  • Sesame oil - 1 teaspoon

Steps

  1. Soak the dried shiitake mushrooms in 500 ml of hot water for about 15 minutes until softened. Remove the mushrooms, reserving the soaking liquid, and slice them thinly.
  2. In a pot, combine the reserved soaking liquid, soy sauce, mirin, and brown sugar. Bring to a simmer over medium heat.
  3. Add the sliced daikon radish and carrot to the pot, cooking for about 10 minutes until they begin to soften.
  4. Stir in the sliced shiitake mushrooms and continue to simmer for another 5 minutes until all ingredients are tender and the flavors meld.
  5. Remove from heat and drizzle with sesame oil. Garnish with chopped green onion before serving.
