Ingredients

  • Spinach - 200 grams
  • Tahini - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Maple syrup - 1 tablespoon
  • Sesame seeds - 2 tablespoons
  • Katsuobushi (vegan alternative) - 2 tablespoons
  • Water - 2 tablespoons
  • Garlic - 1 clove, minced
  • Ginger - 1 teaspoon, grated

Steps

  1. Bring a pot of water to a boil and prepare an ice bath in a bowl.
  2. Add the spinach to the boiling water and blanch for about 1-2 minutes until wilted.
  3. Immediately transfer the spinach to the ice bath to stop the cooking process. Once cooled, drain and squeeze out excess water.
  4. In a bowl, mix tahini, soy sauce, maple syrup, water, minced garlic, and grated ginger until smooth.
  5. In a large mixing bowl, combine the blanched spinach with the tahini dressing and toss well to coat.
  6. Sprinkle sesame seeds and vegan katsuobushi over the top and mix gently.
  7. Serve immediately or chill in the refrigerator for 10 minutes before serving for enhanced flavor.
