- Spinach - 200 grams
- Tahini - 2 tablespoons
- Soy sauce - 1 tablespoon
- Maple syrup - 1 tablespoon
- Sesame seeds - 2 tablespoons
- Katsuobushi (vegan alternative) - 2 tablespoons
- Water - 2 tablespoons
- Garlic - 1 clove, minced
- Ginger - 1 teaspoon, grated
Steps
- Bring a pot of water to a boil and prepare an ice bath in a bowl.
- Add the spinach to the boiling water and blanch for about 1-2 minutes until wilted.
- Immediately transfer the spinach to the ice bath to stop the cooking process. Once cooled, drain and squeeze out excess water.
- In a bowl, mix tahini, soy sauce, maple syrup, water, minced garlic, and grated ginger until smooth.
- In a large mixing bowl, combine the blanched spinach with the tahini dressing and toss well to coat.
- Sprinkle sesame seeds and vegan katsuobushi over the top and mix gently.
- Serve immediately or chill in the refrigerator for 10 minutes before serving for enhanced flavor.
