Ingredients
- Japanese short-grain rice - 150 grams
- Katsuobushi (dried bonito flakes) - 30 grams
- Water - 240 ml
- Soy sauce - 1 tablespoon (15 ml)
- Mirin - 1 tablespoon (15 ml)
- Scallions (green onions) - 2 stalks, finely chopped
- Sesame oil - 1 teaspoon (5 ml)
- Salt - 1/2 teaspoon (2.5 grams) or to taste
Steps
- Rinse the Japanese short-grain rice under cold water until the water runs clear, then drain well.
- In a pot, combine the rinsed rice and 240 ml of water. Let it soak for about 15 minutes.
- After soaking, cover the pot and bring the rice to a boil over medium heat. Once it starts boiling, reduce the heat to low and let it simmer for 12-15 minutes, or until the water is fully absorbed and the rice is tender.
- While the rice is cooking, prepare the seasoning. In a small bowl, mix the soy sauce, mirin, and salt together.
- Once the rice is cooked, remove it from heat and let it sit covered for 5 minutes. Then, fluff the rice with a fork.
- Drizzle the soy sauce mixture over the rice and gently mix in the katsuobushi and chopped scallions. Add sesame oil for extra flavor.
- Serve warm, garnished with additional scallions if desired.
