Ingredients

  • White Miso - 100 grams
  • Katsuobushi (dried bonito flakes) - 30 grams
  • Mirin - 2 tablespoons
  • Soy Sauce - 1 tablespoon
  • Sesame Oil - 1 tablespoon
  • Water - 100 milliliters
  • Broccoli - 200 grams, cut into florets
  • Carrot - 1 medium, sliced
  • Spinach - 100 grams, washed
  • Cooked Brown Rice - 150 grams

Steps

  1. In a small saucepan, combine the white miso, katsuobushi, mirin, soy sauce, sesame oil, and water. Heat over low heat until the mixture is smooth and well combined, about 5 minutes.
  2. While the sauce is heating, bring a pot of water to a boil. Add the broccoli and carrot slices, and blanch for 3-4 minutes until vibrant and tender. Remove the vegetables and immediately transfer them to a bowl of ice water to stop the cooking process.
  3. In the same pot of boiling water, blanch the spinach for 1 minute, then transfer it to the ice water as well. Drain all vegetables and set aside.
  4. To serve, place a portion of cooked brown rice on each plate. Arrange the blanched vegetables on top of the rice and drizzle the katsuobushi miso sauce generously over everything.
