Ingredients
- Japanese short-grain rice - 1 cup
- Water - 1 1/4 cups
- Katsuobushi (dried bonito flakes) - 50 grams
- Soy sauce - 2 tablespoons
- Mirin - 1 tablespoon
- Green onions - 2 stalks, chopped
- Nori (seaweed) sheets - 2 sheets, cut into strips
- Sesame seeds - 1 tablespoon
- Fresh cucumber - 1 small, sliced
- Carrot - 1 small, julienned
Steps
- Rinse the rice under cold water until the water runs clear, then drain.
- In a medium saucepan, combine the rinsed rice and water. Bring to a boil over medium heat, then reduce to low, cover, and simmer for 18-20 minutes or until the water is absorbed.
- While the rice is cooking, prepare the sauce by mixing the soy sauce and mirin in a small bowl.
- Once the rice is cooked, fluff it with a fork and divide it into two serving bowls.
- Sprinkle half of the katsuobushi over each bowl of rice.
- Drizzle the soy sauce mixture over the rice and katsuobushi.
- Garnish each bowl with chopped green onions, nori strips, sesame seeds, cucumber slices, and carrot.
- Serve immediately while the rice is warm.
