Ingredients

  • Katsuobushi (dried bonito flakes) - 20 grams
  • Water - 1 liter
  • Soy sauce - 2 tablespoons
  • Miso paste (white or light) - 1 tablespoon
  • Tofu (firm, diced) - 100 grams
  • Green onions (sliced) - 2 tablespoons
  • Seaweed (nori or wakame) - 5 grams
  • Sesame oil - 1 teaspoon

Steps

  1. In a medium saucepan, bring 1 liter of water to a boil.
  2. Once boiling, add the katsuobushi and reduce the heat to low. Let it simmer for 5 minutes.
  3. Remove the pan from heat and strain the liquid through a fine sieve or cheesecloth to separate the bonito flakes, leaving you with a clear dashi broth.
  4. Return the dashi to the heat and add the soy sauce and miso paste, stirring until the miso is fully dissolved.
  5. Add the diced tofu and let it warm through for about 3 minutes.
  6. In the final minute, add the sliced green onions and seaweed to the soup.
  7. Drizzle with sesame oil before serving.
