- Tofu (firm, diced) - 100 grams
- Green onions (sliced) - 2 tablespoons
- Seaweed (nori or wakame) - 5 grams
- Sesame oil - 1 teaspoon
Steps
- In a medium saucepan, bring 1 liter of water to a boil.
- Once boiling, add the katsuobushi and reduce the heat to low. Let it simmer for 5 minutes.
- Remove the pan from heat and strain the liquid through a fine sieve or cheesecloth to separate the bonito flakes, leaving you with a clear dashi broth.
- Return the dashi to the heat and add the soy sauce and miso paste, stirring until the miso is fully dissolved.
- Add the diced tofu and let it warm through for about 3 minutes.
- In the final minute, add the sliced green onions and seaweed to the soup.
- Drizzle with sesame oil before serving.
