Ingredients
- Canned chickpeas - 240 g
- Panko breadcrumbs - 50 g
- Grated carrots - 50 g
- Chopped green onions - 30 g
- Katsuobushi (dried bonito flakes) - 20 g
- Soy sauce - 1 tablespoon
- Miso paste - 1 tablespoon
- Sesame oil - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Vegetable oil - for frying
- Burger buns - 2
- Lettuce leaves - 2
- Sliced tomatoes - 2
- Miso mayo (mayo mixed with 1 tsp miso) - 2 tablespoons
Steps
- In a mixing bowl, mash the canned chickpeas using a fork or potato masher until mostly smooth, leaving some texture.
- Add the grated carrots, chopped green onions, katsuobushi, soy sauce, miso paste, sesame oil, salt, and black pepper to the mashed chickpeas. Mix well until combined.
- Gradually add the panko breadcrumbs to the mixture until the mixture holds together but is not too dry.
- Divide the mixture into two equal portions and shape each portion into a patty.
- Heat a skillet over medium heat and add a drizzle of vegetable oil. Once hot, place the patties in the skillet and cook for about 4-5 minutes on each side or until golden brown and crispy.
- While the patties are cooking, prepare the miso mayo by mixing mayonnaise with miso paste in a small bowl.
- Toast the burger buns lightly in another pan or toaster.
- Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the cooked patty, a slice of tomato, and a generous dollop of miso mayo. Top with the other half of the bun and serve immediately.
