Ingredients

  • Mirin - 20 ml
  • Ginger - 1 tablespoon, grated
  • Green onions - 2 stalks, chopped
  • Dashi stock - 200 ml
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a medium saucepan, combine sake, soy sauce, mirin, grated ginger, and dashi stock. Bring to a gentle simmer over medium heat.
  2. Season the bonito fillets with salt and black pepper on both sides.
  3. Carefully place the bonito fillets into the simmering mixture. Cover the saucepan and let it cook for about 10-15 minutes, or until the fish is cooked through and flakes easily.
  4. Once cooked, gently remove the bonito from the saucepan and place it on a serving plate.
  5. Increase the heat and let the sauce reduce slightly for about 5 minutes, then stir in the sesame oil.
  6. Pour the reduced sauce over the bonito fillets and garnish with chopped green onions before serving.
