Ingredients

  • Japanese short-grain rice - 150 grams
  • Bonito flakes (katsuobushi) - 50 grams
  • Soy sauce - 15 ml
  • Mirin - 10 ml
  • Dashi stock - 300 ml
  • Green onions - 2 stalks, finely chopped
  • Shiitake mushrooms - 50 grams, sliced
  • Carrot - 1 small, julienned
  • Sesame oil - 5 ml
  • Salt - to taste

Steps

  1. Rinse the Japanese short-grain rice under cold water until the water runs clear, then drain.
  2. In a medium saucepan, combine the rinsed rice with dashi stock and bring to a boil over medium heat.
  3. Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes or until the rice is cooked and the liquid is absorbed.
  4. While the rice is cooking, heat sesame oil in a skillet over medium heat. Add shiitake mushrooms and carrots, and sauté until they are tender, about 5 minutes.
  5. Add the bonito flakes to the skillet along with soy sauce and mirin, stirring to combine. Cook for an additional 2 minutes until heated through.
  6. Once the rice is cooked, fluff it with a fork and gently fold in the sautéed vegetable and bonito mixture.
  7. Serve the Katsuo no Gohan hot, garnished with chopped green onions and a sprinkle of additional bonito flakes if desired.
