Ingredients

  • Chicken breast - 2 pieces (150g each)

  • Egg - 1 large, beaten
  • Panko breadcrumbs - 1 cup
  • Vegetable oil - 1/2 cup (for frying)
  • Umeboshi paste - 2 tablespoons
  • Soy sauce (kosher) - 1 tablespoon
  • Honey - 1 teaspoon
  • Sesame seeds - 1 tablespoon
  • Green onions - 2, finely chopped

Steps

  1. Season the chicken breasts with salt and black pepper on both sides.
  2. Set up a breading station: Place flour in one shallow dish, beaten egg in another, and panko breadcrumbs in a third dish.
  3. Dredge each chicken breast in flour, shaking off excess, then dip into the beaten egg, and finally coat with panko breadcrumbs, pressing gently to adhere.
  4. In a large skillet, heat vegetable oil over medium heat. Once hot, add the breaded chicken cutlets and cook for 4-5 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.
  5. In a small bowl, mix umeboshi paste, soy sauce, and honey to create the sauce.
  6. To serve, slice the chicken cutlets and drizzle the umeboshi sauce over them. Garnish with sesame seeds and chopped green onions.
