- All-purpose flour - 1/2 cup
- Egg - 1 large, beaten
- Panko breadcrumbs - 1 cup
- Vegetable oil - 1/2 cup (for frying)
- Umeboshi paste - 2 tablespoons
- Soy sauce (kosher) - 1 tablespoon
- Honey - 1 teaspoon
- Sesame seeds - 1 tablespoon
- Green onions - 2, finely chopped
Steps
- Season the chicken breasts with salt and black pepper on both sides.
- Set up a breading station: Place flour in one shallow dish, beaten egg in another, and panko breadcrumbs in a third dish.
- Dredge each chicken breast in flour, shaking off excess, then dip into the beaten egg, and finally coat with panko breadcrumbs, pressing gently to adhere.
- In a large skillet, heat vegetable oil over medium heat. Once hot, add the breaded chicken cutlets and cook for 4-5 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.
- In a small bowl, mix umeboshi paste, soy sauce, and honey to create the sauce.
- To serve, slice the chicken cutlets and drizzle the umeboshi sauce over them. Garnish with sesame seeds and chopped green onions.
