  • Goya (bitter melon) - 100 grams, sliced
  • Miso paste (Paleo-friendly) - 2 tablespoons
  • Vegetable broth - 500 ml
  • Green onions - 2, chopped
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Prepare the katsu by seasoning the pork loin with salt and pepper, then dipping it into the egg and coating it with almond flour.
  2. In a skillet, heat coconut oil over medium heat and fry the coated pork loin for about 4-5 minutes on each side, or until golden brown and cooked through. Remove and let it rest before slicing.
  3. In a pot, bring the vegetable broth to a simmer and add the sliced goya. Cook for about 5 minutes until the goya is tender.
  4. Stir in the miso paste until fully dissolved in the broth. Adjust seasoning with salt and pepper as needed.
