- Chicken breast - 200 grams
- Coconut flour - 50 grams
- Egg - 1 large
- Almond flour - 50 grams
- Salt - 1 teaspoon
- Pepper - 1/2 teaspoon
- Goya (bitter melon) - 100 grams, sliced
- Udon noodles (zucchini noodles for Paleo) - 200 grams
- Coconut oil - 2 tablespoons
- Green onions - 2 tablespoons, chopped
- Garlic - 1 clove, minced
- Ginger - 1 teaspoon, grated
- Coconut aminos - 2 tablespoons
Steps
- Begin by preparing the chicken katsu: season the chicken breast with salt and pepper.
- Dredge the chicken in coconut flour, dip it into the beaten egg, then coat with almond flour.
- In a skillet, heat 1 tablespoon of coconut oil over medium heat and cook the chicken for about 5-7 minutes on each side until golden brown and cooked through.
- While the chicken is cooking, prepare the goya: in a separate pan, add the remaining tablespoon of coconut oil, and sauté the sliced goya, garlic, and ginger for about 5 minutes until tender.
- In the same pan, add the zucchini noodles and stir-fry for an additional 2-3 minutes.
- Add the coconut aminos to the pan and mix well to combine everything together.
- Once the chicken is cooked, slice it into strips.
- To serve, place the stir-fried udon and goya mixture onto two plates and top with the sliced chicken katsu.
- Garnish with chopped green onions before serving.
