- Chicken breast - 250 grams
- Almond flour - 50 grams
- Egg - 1 large
- Pork panko (or crushed pork rinds) - 30 grams
- Soy sauce - 1 tablespoon
- Mirin - 1 tablespoon
- Salt - 1/2 teaspoon
- Pepper - 1/4 teaspoon
- Butter - 1 tablespoon
- Romaine lettuce leaves - 4 large
- Sriracha - to taste
- Green onions - 1 stalk, chopped
- Sesame seeds - 1 teaspoon
Steps
- Preheat a skillet over medium heat and melt the butter.
- While the skillet heats, pound the chicken breast to an even thickness for uniform cooking.
- In a bowl, mix the almond flour, pork panko, salt, and pepper. In another bowl, beat the egg and add the soy sauce and mirin.
- Dip each chicken piece first into the egg mixture, then coat with the almond flour and pork panko mixture, pressing gently to adhere.
- Cook the chicken in the skillet for about 5-6 minutes on each side, or until golden brown and cooked through. Remove from heat and let rest for a few minutes.
- While the chicken is resting, prepare the lettuce leaves by washing and drying them.
- Slice the cooked chicken into strips and place them inside the lettuce leaves.
- Drizzle with sriracha, sprinkle with chopped green onions and sesame seeds, and serve immediately.
