Ingredients

  • Chicken breast - 250 grams
  • Almond flour - 50 grams
  • Egg - 1 large
  • Pork panko (or crushed pork rinds) - 30 grams
  • Soy sauce - 1 tablespoon
  • Mirin - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Pepper - 1/4 teaspoon
  • Butter - 1 tablespoon
  • Romaine lettuce leaves - 4 large
  • Sriracha - to taste
  • Green onions - 1 stalk, chopped
  • Sesame seeds - 1 teaspoon

Steps

  1. Preheat a skillet over medium heat and melt the butter.
  2. While the skillet heats, pound the chicken breast to an even thickness for uniform cooking.
  3. In a bowl, mix the almond flour, pork panko, salt, and pepper. In another bowl, beat the egg and add the soy sauce and mirin.
  4. Dip each chicken piece first into the egg mixture, then coat with the almond flour and pork panko mixture, pressing gently to adhere.
  5. Cook the chicken in the skillet for about 5-6 minutes on each side, or until golden brown and cooked through. Remove from heat and let rest for a few minutes.
  6. While the chicken is resting, prepare the lettuce leaves by washing and drying them.
  7. Slice the cooked chicken into strips and place them inside the lettuce leaves.
  8. Drizzle with sriracha, sprinkle with chopped green onions and sesame seeds, and serve immediately.
