Ingredients

  • Chicken breast - 200 grams
  • Almond flour - 50 grams
  • Egg - 1 large
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Coconut oil - 2 tablespoons
  • Cauliflower - 300 grams
  • Rice vinegar - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Cucumber - 1 small, sliced
  • Avocado - 1/2, sliced
  • Soy sauce (low sodium) - for serving
  • Wasabi - for serving

Steps

  1. Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. Chop the cauliflower into florets and steam until tender, about 5-7 minutes. Drain and let it cool slightly.
  3. In a food processor, pulse the steamed cauliflower until it resembles rice. Transfer to a bowl and mix in rice vinegar and sesame oil. Set aside.
  4. Flatten the chicken breast to an even thickness using a meat mallet. Season with salt and pepper.
  5. In a shallow dish, beat the egg. In another dish, place the almond flour.
  6. Dip each chicken piece first into the egg, then coat with almond flour, pressing gently to ensure it adheres.
  7. Heat coconut oil in a skillet over medium heat. Add the breaded chicken and cook for about 4-5 minutes on each side, or until golden brown and cooked through.
  8. Remove the chicken from the skillet and let it rest for a few minutes before slicing into strips.
  9. To serve, place a portion of cauliflower rice on each plate, top with sliced katsu chicken, cucumber, and avocado. Drizzle with soy sauce and serve with wasabi on the side.
