- Chicken breast - 200 grams
- Almond flour - 50 grams
- Egg - 1 large
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Coconut oil - 2 tablespoons
- Cauliflower - 300 grams
- Rice vinegar - 1 tablespoon
- Sesame oil - 1 teaspoon
- Cucumber - 1 small, sliced
- Avocado - 1/2, sliced
- Soy sauce (low sodium) - for serving
- Wasabi - for serving
Steps
- Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
- Chop the cauliflower into florets and steam until tender, about 5-7 minutes. Drain and let it cool slightly.
- In a food processor, pulse the steamed cauliflower until it resembles rice. Transfer to a bowl and mix in rice vinegar and sesame oil. Set aside.
- Flatten the chicken breast to an even thickness using a meat mallet. Season with salt and pepper.
- In a shallow dish, beat the egg. In another dish, place the almond flour.
- Dip each chicken piece first into the egg, then coat with almond flour, pressing gently to ensure it adheres.
- Heat coconut oil in a skillet over medium heat. Add the breaded chicken and cook for about 4-5 minutes on each side, or until golden brown and cooked through.
- Remove the chicken from the skillet and let it rest for a few minutes before slicing into strips.
- To serve, place a portion of cauliflower rice on each plate, top with sliced katsu chicken, cucumber, and avocado. Drizzle with soy sauce and serve with wasabi on the side.
