Ingredients

  • Gluten-Free Soba Noodles - 200 grams
  • Chicken Breast - 250 grams
  • Gluten-Free Panko Breadcrumbs - 100 grams
  • Egg - 1 large
  • Gluten-Free Soy Sauce - 3 tablespoons
  • Mirin - 1 tablespoon
  • Vegetable Oil - 200 ml (for frying)
  • Green Onions - 2 stalks, sliced
  • Sesame Seeds - 1 tablespoon
  • Salt - to taste
  • Black Pepper - to taste

Steps

  1. Cook the gluten-free soba noodles according to package instructions, then drain and rinse under cold water. Set aside.
  2. While the noodles are cooking, prepare the chicken. Season the chicken breast with salt and black pepper, then dip it into the beaten egg, coating it fully.
  3. Coat the egg-dipped chicken breast with gluten-free panko breadcrumbs, pressing to adhere.
  4. Heat the vegetable oil in a large skillet over medium heat. Once hot, carefully add the breaded chicken and fry for about 5-7 minutes on each side, or until golden brown and cooked through. Remove and let it rest on paper towels to absorb excess oil.
  5. In a small bowl, mix the gluten-free soy sauce and mirin to create the sauce.
  6. Slice the fried chicken into strips.
  7. To serve, place a portion of the soba noodles on each plate, top with sliced chicken, drizzle the sauce over, and garnish with sliced green onions and sesame seeds.
