Steps
- Cook the gluten-free soba noodles according to package instructions, then drain and rinse under cold water. Set aside.
- While the noodles are cooking, prepare the chicken. Season the chicken breast with salt and black pepper, then dip it into the beaten egg, coating it fully.
- Coat the egg-dipped chicken breast with gluten-free panko breadcrumbs, pressing to adhere.
- Heat the vegetable oil in a large skillet over medium heat. Once hot, carefully add the breaded chicken and fry for about 5-7 minutes on each side, or until golden brown and cooked through. Remove and let it rest on paper towels to absorb excess oil.
