- Egg - 1 large
- Soy sauce - 2 tablespoons
- Mirin - 1 tablespoon
- Sesame oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Carrot - 1 medium, julienned
- Bell pepper - 1 medium, thinly sliced
- Broccoli - 150 grams, cut into florets
- Green onions - 2, chopped
- Salt - to taste
- Black pepper - to taste
- Water - 1 liter
Steps
- Cook the soba noodles in boiling salted water for about 4-5 minutes until al dente, then drain and rinse under cold water. Set aside.
- While the noodles are cooking, prepare the chicken katsu by flattening the chicken breast with a meat mallet, season with salt and pepper.
- Dip the chicken into the beaten egg, then coat it in panko breadcrumbs until fully covered.
- Heat a non-stick skillet over medium heat and add a tablespoon of sesame oil. Once hot, add the breaded chicken and cook for about 4-5 minutes on each side until golden brown and cooked through. Remove and let it rest.
- In the same skillet, add the garlic and ginger, sauté for 30 seconds until fragrant. Then add the carrot, bell pepper, and broccoli, stir-frying for about 5-6 minutes until the vegetables are tender yet crisp.
- Add the cooked soba noodles to the skillet with the vegetables, and drizzle with soy sauce and mirin, tossing everything together until well combined. Cook for another minute.
- Slice the chicken katsu into strips and serve it over the soba noodle stir-fry, garnishing with chopped green onions.
