Ingredients

  • Chicken breast - 300 grams
  • Almond flour - 100 grams
  • Coconut aminos - 3 tablespoons
  • Miso paste (white or yellow) - 2 tablespoons
  • Udon noodles (Paleo-friendly, such as zucchini noodles) - 200 grams
  • Vegetable broth (low-sodium) - 500 ml
  • Green onions - 2 stalks, chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Sesame oil - 1 tablespoon
  • Olive oil - for frying
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Begin by preparing the chicken katsu: place the chicken breast between two pieces of plastic wrap and pound it to an even thickness.
  2. Season the chicken with salt and pepper, then dip it into coconut aminos, followed by coating it thoroughly with almond flour.
  3. In a frying pan, heat olive oil over medium heat and cook the chicken for about 4-5 minutes on each side until golden brown and cooked through. Remove and let it rest.
  4. In the same pan, add sesame oil, then sauté minced garlic and grated ginger until fragrant, about 1 minute.
  5. Pour in the vegetable broth and stir in the miso paste until fully dissolved. Bring the mixture to a gentle simmer.
  6. Add the udon noodles to the broth and cook according to the package instructions (if using zucchini noodles, just heat through).
  7. Slice the cooked chicken katsu into strips and serve over the udon in bowls, garnished with chopped green onions.
