- Bitter melon (goya) - 100 grams, thinly sliced
- Miso paste (organic, no added sugars) - 2 tablespoons
- Coconut aminos - 1 tablespoon
- Sesame oil - 1 teaspoon
- Green onions - 2, sliced
- Sesame seeds - 1 tablespoon
Steps
- 1. Season the chicken breast with salt and pepper on both sides.
- 2. Dredge the chicken in almond flour, ensuring it's evenly coated.
- 3. Heat coconut oil in a skillet over medium heat and add the coated chicken. Cook for about 5-7 minutes on each side until golden brown and cooked through. Remove from heat and let it rest before slicing.
- 4. In the same skillet, add the sliced goya and sauté for 3-4 minutes until slightly tender.
- 5. Prepare the udon noodles according to package instructions, then drain and set aside.
- 6. In a bowl, mix together the miso paste, coconut aminos, and sesame oil to create the sauce.
- 7. Add the cooked udon noodles and sautéed goya into the skillet, pour the miso sauce over, and toss to combine over medium heat for 2-3 minutes.
- 8. Slice the chicken katsu and serve it on top of the udon and goya, garnished with green onions and sesame seeds.
