  • Chicken breast - 250 grams

  • Udon noodles (paleo-friendly, zucchini noodles or konjac noodles) - 200 grams
  • Bitter melon (goya) - 100 grams, thinly sliced
  • Miso paste (organic, no added sugars) - 2 tablespoons
  • Coconut aminos - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Green onions - 2, sliced
  • Sesame seeds - 1 tablespoon

Steps

  1. 1. Season the chicken breast with salt and pepper on both sides.
  2. 2. Dredge the chicken in almond flour, ensuring it's evenly coated.
  3. 3. Heat coconut oil in a skillet over medium heat and add the coated chicken. Cook for about 5-7 minutes on each side until golden brown and cooked through. Remove from heat and let it rest before slicing.
