Ingredients

  • Eggplant - 200 grams
  • Bitter melon (goya) - 100 grams
  • Coconut flour - 50 grams
  • Egg - 1 large
  • Olive oil - 2 tablespoons
  • Miso paste - 2 tablespoons
  • Water - 2 tablespoons
  • Sesame oil - 1 teaspoon
  • Garlic (minced) - 1 clove
  • Ginger (grated) - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Green onions (sliced) - for garnish

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Slice the eggplant into 1 cm thick rounds and sprinkle with salt. Let it sit for 10 minutes to draw out moisture.
  3. Rinse the salt off the eggplant slices and pat them dry with paper towels.
  4. Cut the bitter melon in half lengthwise, scoop out the seeds, and slice into thin half-moons.
  5. In a bowl, combine the miso paste, water, sesame oil, garlic, and ginger to create the miso sauce.
  6. Dip each eggplant slice into the beaten egg, then coat with coconut flour, shaking off excess flour.
  7. In a skillet, heat 1 tablespoon of olive oil over medium heat. Fry the eggplant slices until golden brown, about 3-4 minutes per side. You may need to do this in batches.
  8. Once fried, place the eggplant on a baking sheet and bake in the preheated oven for 10 minutes to ensure they are cooked through.
  9. In a separate skillet, heat the remaining tablespoon of olive oil over medium heat. Add the sliced bitter melon and sauté for about 5 minutes until tender.
  10. Remove the eggplant from the oven and arrange it on plates alongside the sautéed bitter melon.
  11. Drizzle the miso sauce over the top of the eggplant and bitter melon, and garnish with sliced green onions before serving.
