- Eggplant - 200 grams
- Bitter melon (goya) - 100 grams
- Coconut flour - 50 grams
- Egg - 1 large
- Olive oil - 2 tablespoons
- Miso paste - 2 tablespoons
- Water - 2 tablespoons
- Sesame oil - 1 teaspoon
- Garlic (minced) - 1 clove
- Ginger (grated) - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Green onions (sliced) - for garnish
Steps
- Preheat the oven to 200°C (400°F).
- Slice the eggplant into 1 cm thick rounds and sprinkle with salt. Let it sit for 10 minutes to draw out moisture.
- Rinse the salt off the eggplant slices and pat them dry with paper towels.
- Cut the bitter melon in half lengthwise, scoop out the seeds, and slice into thin half-moons.
- In a bowl, combine the miso paste, water, sesame oil, garlic, and ginger to create the miso sauce.
- Dip each eggplant slice into the beaten egg, then coat with coconut flour, shaking off excess flour.
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Fry the eggplant slices until golden brown, about 3-4 minutes per side. You may need to do this in batches.
- Once fried, place the eggplant on a baking sheet and bake in the preheated oven for 10 minutes to ensure they are cooked through.
- In a separate skillet, heat the remaining tablespoon of olive oil over medium heat. Add the sliced bitter melon and sauté for about 5 minutes until tender.
- Remove the eggplant from the oven and arrange it on plates alongside the sautéed bitter melon.
- Drizzle the miso sauce over the top of the eggplant and bitter melon, and garnish with sliced green onions before serving.
