Ingredients
- Chicken breast - 200 grams
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- All-purpose flour - 50 grams
- Egg - 1 large
- Panko breadcrumbs - 100 grams
- Vegetable oil - for frying
- Sushi rice - 150 grams
- Rice vinegar - 1 tablespoon
- Sugar - 1 teaspoon
- Nori sheets - 2
- Cucumber - 1 small, julienned
- Avocado - 1 small, sliced
- Soy sauce - for serving
- Wasabi - for serving
Steps
- Rinse the sushi rice under cold water until the water runs clear, then cook it according to package instructions.
- Once the rice is cooked, mix rice vinegar and sugar in a small bowl until dissolved, then fold this mixture into the rice. Let it cool to room temperature.
- While the rice cools, season the chicken breast with salt and black pepper.
- Dredge the chicken in flour, dip it in the beaten egg, and then coat it with panko breadcrumbs.
- Heat vegetable oil in a frying pan over medium heat and fry the chicken for about 4-5 minutes on each side until golden brown and cooked through. Remove and let it rest for a few minutes before slicing.
- Lay a nori sheet on a bamboo sushi mat, and spread a thin layer of sushi rice over the nori, leaving a 2 cm border at the top.
- Place slices of the fried chicken, cucumber, and avocado in a line across the rice, then roll the sushi tightly from the bottom up using the mat.
- Seal the edge with a little water and repeat with the second nori sheet.
- Slice the rolls into bite-sized pieces and serve with soy sauce and wasabi on the side.
