Ingredients

  • Bitter melon - 1 medium, sliced thinly
  • Japanese eggplant - 1 medium, sliced into rounds
  • Almond flour - 100 grams
  • Egg - 1 large, beaten
  • Coconut oil - 3 tablespoons, for frying
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Green onion - 2 stalks, finely chopped
  • Coconut aminos - 2 tablespoons, for dipping
  • Rice vinegar - 1 tablespoon, for dipping

Steps

  1. Prepare the bitter melon by slicing it thinly and lightly salting it. Let it sit for about 10 minutes to draw out bitterness, then rinse and pat dry.
  2. Slice the Japanese eggplant into rounds and sprinkle with salt. Let sit for 5 minutes to draw out moisture, then rinse and pat dry.
  3. In a shallow dish, combine almond flour, garlic powder, salt, and black pepper.
  4. Dip each slice of bitter melon and eggplant into the beaten egg, then coat thoroughly with the almond flour mixture.
  5. In a large skillet, heat coconut oil over medium heat. Once hot, carefully add the coated bitter melon and eggplant slices, frying in batches for about 3-4 minutes on each side until golden brown and crispy.
  6. Remove the fried slices and let them drain on paper towels to remove excess oil.
  7. For the dipping sauce, mix coconut aminos and rice vinegar in a small bowl and stir in chopped green onions.
  8. Serve the crispy katsu goya nasu warm with the dipping sauce on the side.
