  • Udon noodles - 200g
  • Bitter melon (goya) - 100g, sliced

  • Coconut aminos - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Green onions - 2, chopped
  • Sesame seeds - 1 tablespoon, for garnish

Steps

  1. Bring a pot of water to a boil and cook the udon noodles according to package instructions. Drain and set aside.
  2. In a large pot, heat sesame oil over medium heat. Add minced garlic and grated ginger, sautéing until fragrant, about 1 minute.
  3. Add the sliced bitter melon to the pot and sauté for 3-4 minutes until slightly softened.
  4. Pour in the chicken or vegetable broth and bring to a simmer. Stir in the miso paste and coconut aminos, mixing well until the miso is fully dissolved.
  5. Add the cooked udon noodles to the pot and simmer for another 2-3 minutes to heat through.
