- Bitter melon (goya) - 100g, sliced

- Chicken or vegetable broth - 500ml
- Coconut aminos - 1 tablespoon
- Sesame oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Green onions - 2, chopped
- Sesame seeds - 1 tablespoon, for garnish
Steps
- Bring a pot of water to a boil and cook the udon noodles according to package instructions. Drain and set aside.
- In a large pot, heat sesame oil over medium heat. Add minced garlic and grated ginger, sautéing until fragrant, about 1 minute.
- Add the sliced bitter melon to the pot and sauté for 3-4 minutes until slightly softened.
- Pour in the chicken or vegetable broth and bring to a simmer. Stir in the miso paste and coconut aminos, mixing well until the miso is fully dissolved.
- Add the cooked udon noodles to the pot and simmer for another 2-3 minutes to heat through.
