- Pork loin - 300 grams
- Bitter melon (goya) - 100 grams
- Cauliflower - 1 medium head (approx. 600 grams)
- Coconut aminos - 3 tablespoons
- Almond flour - 1/2 cup
- Egg - 1 large
- Garlic powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons
- Green onions - 2 stalks (for garnish)
Steps
- Preheat the oven to 200°C (400°F).
- Cut the cauliflower into florets and pulse in a food processor until it resembles rice. Set aside.
- Slice the bitter melon in half lengthwise, scoop out the seeds, and slice it into thin half-moons.
- In a shallow bowl, beat the egg. In another bowl, mix almond flour, garlic powder, salt, and black pepper.
- Pound the pork loin to an even thickness, then dip each piece in the egg and coat with the almond flour mixture.
- Heat 1 tablespoon of olive oil in a skillet over medium heat. Cook the pork cutlets for about 4-5 minutes on each side until golden brown and cooked through. Remove from skillet and keep warm.
- In the same skillet, add the remaining olive oil and sauté the bitter melon for about 3-4 minutes until slightly softened. Add the cauliflower rice and cook for another 5 minutes, stirring occasionally.
- Add coconut aminos to the cauliflower and bitter melon mixture, stirring well to combine.
- To serve, divide the cauliflower rice and bitter melon mixture between two bowls, top with the pork cutlets, and garnish with chopped green onions.
