Ingredients
- Bitter melon - 1 medium (about 200g)
- Ground pork - 200g
- Coconut flour - 3 tablespoons
- Egg - 1 large
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Green onions - 2 stalks, finely chopped
- Coconut oil - 3 tablespoons (for frying)
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
Steps
- Slice the bitter melon in half lengthwise and scoop out the seeds using a spoon. Then, slice each half into 1 cm thick pieces and sprinkle with salt. Let them sit for about 10 minutes to draw out excess moisture.
- In a mixing bowl, combine the ground pork, minced garlic, grated ginger, chopped green onions, coconut flour, egg, salt, and black pepper. Mix until well blended.
- Rinse the salted bitter melon slices under cold water to remove excess salt and pat them dry with paper towels.
- Take a spoonful of the pork mixture and stuff it into the hollowed-out side of each bitter melon slice, pressing firmly to secure the filling.
- Heat the coconut oil in a skillet over medium heat. Once hot, place the stuffed bitter melons in the skillet and fry for about 4-5 minutes on each side until golden brown and cooked through.
- Remove the Katsu Goya from the skillet and place them on a paper towel to drain excess oil. Serve warm.
