Ingredients

  • Bitter melon - 1 medium (about 200g)
  • Ground pork - 200g
  • Coconut flour - 3 tablespoons
  • Egg - 1 large
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Green onions - 2 stalks, finely chopped
  • Coconut oil - 3 tablespoons (for frying)
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon

Steps

  1. Slice the bitter melon in half lengthwise and scoop out the seeds using a spoon. Then, slice each half into 1 cm thick pieces and sprinkle with salt. Let them sit for about 10 minutes to draw out excess moisture.
  2. In a mixing bowl, combine the ground pork, minced garlic, grated ginger, chopped green onions, coconut flour, egg, salt, and black pepper. Mix until well blended.
  3. Rinse the salted bitter melon slices under cold water to remove excess salt and pat them dry with paper towels.
  4. Take a spoonful of the pork mixture and stuff it into the hollowed-out side of each bitter melon slice, pressing firmly to secure the filling.
  5. Heat the coconut oil in a skillet over medium heat. Once hot, place the stuffed bitter melons in the skillet and fry for about 4-5 minutes on each side until golden brown and cooked through.
  6. Remove the Katsu Goya from the skillet and place them on a paper towel to drain excess oil. Serve warm.
