Ingredients

  • Chicken breast - 300 grams
  • Almond flour - 100 grams
  • Egg - 1 large
  • Cabbage - 200 grams, thinly sliced
  • Soy sauce - 2 tablespoons
  • Mirin (optional) - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Green onion - 1, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Cooking oil - for frying

Steps

  1. 1. Begin by preparing the chicken breast; season it with salt and black pepper on both sides.
  2. 2. In a shallow bowl, beat the egg and set it aside. In another bowl, place the almond flour.
  3. 3. Dip each chicken breast into the egg, allowing excess to drip off, then coat it in almond flour, pressing gently to adhere.
  4. 4. Heat cooking oil in a skillet over medium heat. Once hot, add the coated chicken breasts and fry for about 5-7 minutes per side or until golden brown and cooked through. Remove and let rest before slicing.
  5. 5. In the same skillet, add sesame oil and sauté the sliced cabbage until tender, about 3-4 minutes. Season with salt and pepper to taste.
  6. 6. In a small bowl, mix the soy sauce and mirin (if using). Pour this mixture over the sautéed cabbage and stir to combine.
  7. 7. Slice the fried chicken into strips and place it on top of the sautéed cabbage in the skillet.
  8. 8. Pour the remaining egg over the chicken and cabbage. Cover and cook for an additional 2-3 minutes or until the egg is just set.
  9. 9. Serve hot, garnished with chopped green onion.
