Ingredients

  • Chicken breast - 300 grams
  • Almond flour - 100 grams
  • Egg - 1 large
  • Soy sauce - 2 tablespoons
  • Mirin - 1 tablespoon
  • Vegetable oil - 2 tablespoons
  • Zucchini - 100 grams, sliced
  • Shiitake mushrooms - 100 grams, sliced
  • Red bell pepper - 1 medium, sliced
  • Green onion - 2 stalks, chopped
  • Eggs - 2 large
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Prepare the chicken by flattening it to an even thickness and marinating it in soy sauce, mirin, salt, and black pepper for 10 minutes.
  2. In a shallow bowl, beat 1 egg and place the almond flour in another dish.
  3. Coat the marinated chicken in the beaten egg, then dredge it in almond flour until fully covered.
  4. Heat 1 tablespoon of vegetable oil in a skillet over medium heat. Fry the chicken for about 4-5 minutes on each side until golden brown and cooked through. Remove and keep warm.
  5. In the same skillet, add another tablespoon of vegetable oil, then add sliced zucchini, shiitake mushrooms, and red bell pepper. Sauté for 5-7 minutes until the vegetables are tender.
  6. In a bowl, whisk together 2 eggs, a pinch of salt, and a tablespoon of soy sauce. Pour the egg mixture over the sautéed vegetables and cook gently, stirring until the eggs are just set.
  7. Slice the fried chicken into strips and serve it over the vegetable-egg mixture. Garnish with chopped green onions.
