Ingredients

  • Firm tofu - 300 grams
  • Almond flour - 1/2 cup
  • Egg - 1 large
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons
  • Soy sauce - 2 tablespoons
  • Dashi stock - 200 ml
  • Green onions - 2 stalks, sliced
  • Cabbage - 100 grams, shredded
  • Carrot - 1 medium, julienned
  • Sesame seeds - 1 tablespoon

Steps

  1. Press the firm tofu to remove excess moisture, then cut it into 1 cm thick slices.
  2. In a bowl, beat the egg and season with salt and black pepper.
  3. Dip each tofu slice into the beaten egg, then coat it with almond flour, pressing gently to adhere.
  4. Heat olive oil in a frying pan over medium heat. Cook the tofu slices for about 3-4 minutes on each side until golden brown and crispy. Remove and set aside.
  5. In the same pan, add the shredded cabbage and julienned carrot. Sauté for 3-4 minutes until slightly tender.
  6. Pour in the dashi stock and soy sauce into the pan, allowing it to simmer for 2-3 minutes.
  7. Return the crispy tofu to the pan, spooning the broth over it. Cook for an additional 2 minutes to heat through.
  8. Serve the Katsu Don hot, garnished with sliced green onions and a sprinkle of sesame seeds.
