Ingredients
- Salmon fillets - 200 grams
- Firm tofu - 200 grams
- Eggs - 2 large
- Soy sauce - 2 tablespoons
- Mirin - 1 tablespoon
- Sesame oil - 1 tablespoon
- Green onions - 2 stalks, chopped
- Cabbage - 100 grams, shredded
- Salt - to taste
- Black pepper - to taste
- Panko breadcrumbs - 50 grams (optional for crispiness)
- Cooking oil - for frying
Steps
- Press the firm tofu to remove excess moisture, then cut it into 1 cm thick slices.
- In a bowl, combine soy sauce, mirin, salt, and pepper. Marinate the salmon fillets in this mixture for about 10 minutes.
- In a non-stick frying pan, heat sesame oil over medium heat. Add the marinated salmon and fry for about 3-4 minutes on each side until golden brown and cooked through. Remove from the pan and set aside.
- In the same pan, add more oil if needed and fry the tofu slices until golden and crispy on both sides, about 3 minutes per side. If desired, coat the tofu with panko breadcrumbs before frying for extra crunch.
- In a bowl, beat the eggs and season with a pinch of salt. Pour the eggs into the pan and scramble gently until just set.
- To assemble, place shredded cabbage in serving bowls, top with crispy tofu, salmon, scrambled eggs, and garnish with chopped green onions.
