Ingredients

  • Salmon fillets - 200 grams
  • Firm tofu - 200 grams
  • Eggs - 2 large
  • Soy sauce - 2 tablespoons
  • Mirin - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Green onions - 2 stalks, chopped
  • Cabbage - 100 grams, shredded
  • Salt - to taste
  • Black pepper - to taste
  • Panko breadcrumbs - 50 grams (optional for crispiness)
  • Cooking oil - for frying

Steps

  1. Press the firm tofu to remove excess moisture, then cut it into 1 cm thick slices.
  2. In a bowl, combine soy sauce, mirin, salt, and pepper. Marinate the salmon fillets in this mixture for about 10 minutes.
  3. In a non-stick frying pan, heat sesame oil over medium heat. Add the marinated salmon and fry for about 3-4 minutes on each side until golden brown and cooked through. Remove from the pan and set aside.
  4. In the same pan, add more oil if needed and fry the tofu slices until golden and crispy on both sides, about 3 minutes per side. If desired, coat the tofu with panko breadcrumbs before frying for extra crunch.
  5. In a bowl, beat the eggs and season with a pinch of salt. Pour the eggs into the pan and scramble gently until just set.
  6. To assemble, place shredded cabbage in serving bowls, top with crispy tofu, salmon, scrambled eggs, and garnish with chopped green onions.
