Ingredients

  • Chicken breast - 200 grams
  • Firm tofu - 150 grams
  • Eggs - 2 large
  • Soy sauce - 3 tablespoons
  • Mirin - 2 tablespoons
  • Dashi stock - 150 ml
  • Green onions - 2 stalks, chopped
  • Coconut flour - 2 tablespoons
  • Cornstarch - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Pepper - 1/4 teaspoon
  • Oil (for frying) - 3 tablespoons

Steps

  1. Begin by pressing the tofu to remove excess moisture. Cut the tofu into 1 cm thick slices.
  2. In a bowl, mix the coconut flour, cornstarch, salt, and pepper. Dredge the chicken breast in this mixture, ensuring it's fully coated.
  3. Heat 2 tablespoons of oil in a pan over medium heat. Add the chicken and cook for about 5-7 minutes on each side or until golden and cooked through. Remove and set aside.
  4. In the same pan, add the remaining oil and fry the tofu until golden brown on both sides, about 3-4 minutes. Remove and set aside with the chicken.
  5. In a bowl, whisk together the eggs, soy sauce, mirin, and dashi stock.
  6. In the pan, add the chopped green onions and pour the egg mixture over them. Let it cook for 2-3 minutes until the edges start to set.
  7. Add the chicken and tofu back into the pan, gently pushing them into the egg mixture. Cover and cook for another 3-4 minutes until the eggs are fully set.
  8. Serve hot, garnished with additional green onions if desired.
