Ingredients
- Salmon fillet - 300 grams
- Almond flour - 50 grams
- Egg - 1 large
- Cauliflower - 400 grams (riced)
- Soy sauce - 2 tablespoons
- Mirin - 1 tablespoon
- Green onion - 2 stalks, chopped
- Salt - to taste
- Black pepper - to taste
- Coconut oil - 2 tablespoons
- Sesame seeds - 1 tablespoon
Steps
- 1. Begin by ricing the cauliflower using a food processor or grater. Set aside.
- 2. Season the salmon fillets with salt and black pepper, then coat them in almond flour evenly on all sides.
- 3. Heat 1 tablespoon of coconut oil in a frying pan over medium heat. Add the salmon fillets and cook for about 4-5 minutes on each side or until golden brown and cooked through. Remove from the pan and set aside.
- 4. In the same pan, add the remaining tablespoon of coconut oil and the riced cauliflower. Sauté for about 5-7 minutes until tender. Season with salt and soy sauce to taste.
- 5. In a bowl, whisk the egg with mirin and a pinch of salt. Pour the egg mixture over the sautéed cauliflower, gently mixing to combine and allowing it to cook for an additional minute until set.
- 6. Slice the cooked salmon into strips and place it on top of the cauliflower rice mixture in the pan.
- 7. Garnish with chopped green onions and sesame seeds before serving.
