Ingredients

  • Chicken breast - 300 grams
  • Almond flour - 100 grams
  • Egg - 2 large
  • Soy sauce - 30 ml
  • Dashi stock - 200 ml
  • Green onions - 2 stalks, chopped
  • Spinach - 100 grams
  • Olive oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 200°C (390°F).
  2. Slice the chicken breast into thin cutlets and season both sides with salt and black pepper.
  3. Coat each cutlet with almond flour, pressing gently to adhere.
  4. Heat olive oil in a large skillet over medium heat. Cook the chicken cutlets for about 4-5 minutes on each side, or until golden brown and cooked through. Transfer to a baking tray and keep warm in the oven.
  5. In the same skillet, add spinach and sauté until wilted. Remove from the skillet and set aside.
  6. In a bowl, whisk together eggs, dashi stock, and soy sauce. Pour this mixture into the skillet over medium heat.
  7. Add the sautéed spinach and chopped green onions to the egg mixture. Cook gently, stirring occasionally, until the eggs are softly scrambled but still slightly runny.
  8. To serve, place a chicken cutlet on a plate, top with the egg and spinach mixture, and garnish with additional green onions if desired.
