Ingredients

  • Chicken breast - 300 grams
  • Almond flour - 100 grams
  • Egg - 1 large
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Onion - 1 medium, thinly sliced
  • Soy sauce - 2 tablespoons
  • Mirin - 1 tablespoon
  • Cauliflower (riced) - 200 grams
  • Green onions - 2 stalks, chopped
  • Oil (for frying) - 100 ml

Steps

  1. Prepare the chicken by seasoning with salt, pepper, and garlic powder, then dredge in almond flour.
  2. Heat oil in a frying pan over medium heat and fry the chicken until golden brown and cooked through, about 5-7 minutes per side. Remove and let it rest.
  3. In the same pan, sauté the sliced onion until translucent, about 3 minutes.
  4. Add soy sauce and mirin to the onions, stirring well, then reduce the heat to low.
  5. In a bowl, whisk the egg and pour it over the onion mixture, gently stirring to combine and cook until just set.
  6. Meanwhile, steam or sauté the riced cauliflower until tender and fluffy, about 5 minutes.
