Katsu Don is a delightful fusion of crispy, breaded chicken cutlet served over a bed of cauliflower rice, topped with a savory sauce and a soft-cooked egg. This low-carb version captures the authentic flavors of Japan while being a satisfying midnight snack.

Ingredients
- Chicken breast - 300 grams
- Almond flour - 50 grams
- Egg - 1 large
- Cauliflower rice - 300 grams
- Soy sauce - 30 ml
- Mirin - 15 ml
- Dashi stock - 120 ml
- Green onions - 2 stalks, sliced
- Salt - to taste
- Pepper - to taste
- Cooking oil - for frying
- Sesame oil - 1 teaspoon
Steps
- 1. Begin by preparing the chicken breast; flatten it slightly with a meat mallet and season both sides with salt and pepper.
- 2. In a shallow dish, beat the egg and in another dish, place the almond flour.
- 3. Dip the chicken breast into the egg, allowing excess to drip off, then coat it evenly with almond flour.
- 4. Heat cooking oil in a frying pan over medium heat and fry the chicken for about 4-5 minutes on each side until golden brown and cooked through. Remove and let it rest.
- 5. In the same pan, add the dashi stock, soy sauce, mirin, and sesame oil; bring to a simmer.
- 6. Add the cauliflower rice to the pan and stir to combine, cooking for about 5 minutes until the cauliflower is tender.
- 7. While the cauliflower is cooking, prepare the egg; in a small pot, bring water to a boil, then gently add the egg and cook for 6-7 minutes for a soft-boiled effect. Remove and cool in cold water.
- 8. Slice the cooked chicken into strips and place it on top of the cauliflower rice in the pan. Drizzle the sauce over the top.
- 9. Peel the egg, cut it in half, and place it on top of the chicken and cauliflower rice. Garnish with sliced green onions.
- 10. Serve hot and enjoy your low-carb Katsu Don.
