Ingredients

  • Udon noodles - 200 grams
  • Chicken breast - 200 grams

  • Egg - 1 large
  • Vegetable oil - 1/4 cup (for frying)

  • Carrot - 1 medium, sliced
  • Potato - 1 medium, diced
  • Curry powder - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Chicken or vegetable broth - 500 ml

  • Green onions - for garnish

Steps

  1. Cook the udon noodles according to package instructions, then drain and set aside.
  2. Prepare the chicken cutlets by seasoning the chicken breast with salt and pepper. Dredge the chicken in flour, dip in beaten egg, and coat with panko breadcrumbs.
  3. In a frying pan, heat the vegetable oil over medium heat. Fry the chicken cutlets for about 4-5 minutes on each side until golden brown and cooked through. Remove and let drain on paper towels.
  4. In the same pan, add the diced onion, sliced carrot, and diced potato. Sauté for 5-7 minutes until the vegetables begin to soften.
  5. Add the curry powder, soy sauce, and broth to the pan. Stir well and bring to a simmer. Cook for an additional 10-15 minutes until the vegetables are tender and the sauce thickens slightly.
  6. Slice the fried chicken cutlets into strips.
  7. To serve, place a portion of udon noodles in a bowl, ladle the curry sauce and vegetables over the noodles, and top with the sliced chicken. Garnish with chopped green onions.
