Ingredients

  • Chicken breast - 200 grams
  • Panko breadcrumbs - 1/2 cup
  • Egg - 1, beaten
  • All-purpose flour - 1/4 cup
  • Vegetable oil - 2 tablespoons
  • Onion - 1 medium, diced
  • Carrot - 1 medium, sliced
  • Potato - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Curry powder - 2 tablespoons
  • Vegetable broth - 4 cups
  • Soy sauce - 1 tablespoon
  • Coconut milk - 1/2 cup
  • Green onions - for garnish
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Prepare the chicken by seasoning with salt and pepper, then coat in flour, dip in beaten egg, and finally coat with panko breadcrumbs.
  2. Heat vegetable oil in a pan over medium heat and fry the chicken until golden brown and cooked through, about 4-5 minutes per side. Remove and set aside.

  5. Stir in curry powder and cook for another minute to release flavors.
  6. Pour in the vegetable broth and bring to a boil, then reduce heat and simmer for 15 minutes until the vegetables are tender.
  7. Stir in coconut milk and soy sauce, adjusting seasoning with salt and pepper as needed.
  8. Slice the fried chicken into strips and serve on top of the curry soup, garnished with chopped green onions.
